The decor at Quimera is impressive, the premises being located in an historic stone-lined tunnel. One gets the impression that food is as important as the Bier. I was left in two minds as to whether the staff were being hyper efficient, or just insufferable. Very much a case of – stand here not, there; this is how we do things.
Brett, the Hector plate cannot tolerate it. Five of the twelve taps featured Bier made with this yeast infection. Even Bier from another brewery had this. Perhaps the management will get this out of their system. There is potential here for a truly impressive business.
Amber, muddy in appearance, this dry tasting Bier had an ok body. It very much lived up to its name – not another f’n IPA – indeed.
Cascade 5.3%
This Pale Ale was dark gold in colour, the haze was more mud-like. Sour at times, there was also an occasional blast of something not right. Basically, this was a poor Bier.
